PROTOKOLL은 스페셜티 커피 로스터리로서 ‘저장’과 ‘기록’을 뜻하는 독일어에서 시작되었습니다. 커피를 중심으로 기록의 과정을 담아내는 공간입니다. 기록은 두터운 수첩 속에, 사유하는 시간 안에, 연필을 들어 쓰는 행위에서 오랜 날들에 걸쳐 보이거나 보이지 않는 모든 형태로 남습니다. 로스팅 프로파일과 추출 레시피, 각자의 관점에서 감각한 커피 경험까지 다양한 방식의 아카이브를 만들어갑니다.

PROTOKOLL is a specialty coffee roastery whose name originates from the German word meaning “storage” and “record.” It is a space that captures the process of documenting through the lens of coffee.

Records are preserved in thick notebooks, in moments of contemplation, and in the act of putting pencil to paper—remaining in all visible and invisible forms over time. From roasting profiles and extraction recipes to individual sensory impressions, we create a diverse archive shaped by every coffee experience.
