PROTOKOLL은 스페셜티 커피 로스터리로서 ‘저장’과 ‘기록’을 뜻하는 독일어에서 시작되었습니다. 커피를 중심으로 기록의 과정을 담아내는 공간입니다. 

기록은 두터운 수첩 속에, 사유하는 시간 안에, 연필을 들어 쓰는 행위에서 오랜 날들에 걸쳐 보이거나 보이지 않는 모든 형태로 남습니다. 로스팅 프로파일과 추출 레시피, 각자의 관점에서 감각한 커피 경험까지 다양한 방식의 아카이브를 만들어갑니다. 

PROTOKOLL is a specialty coffee roastery whose name originates from the German word meaning “storage” and “record.” It is a space that captures the process of documenting through the lens of coffee.

Records are preserved in thick notebooks, in moments of contemplation, and in the act of putting pencil to paper—remaining in all visible and invisible forms over time. From roasting profiles and extraction recipes to individual sensory impressions, we create a diverse archive shaped by every coffee experience. 

스페셜티 커피 로스터리 프로토콜은 하루에 두 잔의 커피를 마시길 희망합니다. 그중 한 잔은 에스프레소 머신으로 내린 조금은 묵직한 커피였으면 합니다. 오랜 시간 우리에게 익숙한 풍미를 지니면서도, 매일 마셔도 부담 없는 인상을 남기는 한 잔이라면 이상적일 것입니다.

또 다른 한 잔은 정성스럽게 내린 브루잉 커피이길 바랍니다. 추출되는 시간 동안 숨을 고르고 천천히 음미할 수 있도록요. 티(Tea)와 같은 섬세한 향을 품은 커피로 편안한 마무리를 위한 한 잔을 제안합니다. 

At PROTOKOLL, a specialty coffee roastery, we hope you enjoy two cups of coffee a day. The first is a slightly weightier cup brewed on an espresso machine—one with a familiar flavor profile that has accompanied us over time, yet remains easy to drink every day without strain.

The second is a thoughtfully prepared brewed coffee. We hope it allows you to pause, breathe, and savor the moment throughout the extraction. For a gentle finish, we recommend a cup with delicate, tea-like aromatics.
